Instructions
Step 1
Mix flour, salt & yeast in a large bowl. Mix well. Make a well in the centre.
Step 2
Pour milk into jug. Add water to make 6 fl.oz liquid (160ml) total liquid.
Step 3
Add liquid to flour mixture, making your hand into a rigid claw to use as a mixer to combine the dough. Add more water if necessary to make a soft, elastic dough. It is better for the dough to be soft rather than too dry, although you do not want a slop!
Step 4
Turn dough onto a floured work surface. Knead hard 5 mins.
Step 5
Loosely cover dough with plastic bag or damp tea-towel (and name tag)
Step 6
Place in warm place to ‘prove’-double in size (30 mins – 1 hour depending on warmth & humidity)

Oven on Gas 8/220 °c
Step 8
‘Knock back’ dough by kneading again on a floured table for 5 mins. This distributes carbon dioxide gas more evenly.
Step 9
Shape into a flat oval shape, place on a greased baking tray.
Step 10
Use your finger tips to make decisive dimples over the top of the bread.
Step 11
Push in spikes of rosemary. Drizzle with olive oil, sprinkle with sea salt if you wish.
Step 12
Bake in top half of the oven for 15-20 mins until crispy and golden brown.
