Place pork belly on a roasting pan or cookie sheet with rack Cover skin with lots of salt, should be thick Add enough water to the bottom of the pan, but don’t let it touch the meat Cook for 30 minutes at 350 Remove salt from the skin Then cook for 40 minutes at 465 Cut into bite sized pieces and enjoy
