Garlic scape pesto potato salad
This recipe is primarily for the pesto. Garlic scapes are the tall bits that sprout from planted garlic. When they curl it’s time to cut them off. In Nova Scotia this happens in early July. Great on cold potatoes for potato salad or warm potatoes also.

Step 1
Chop garlic scapes into 1-2” lengths. In a food processor add all ingredients starting with 1/4 cup oil and purée. Add more oil as needed to get it to purée. You may need to work in batches if you have a mini food processor. Toss over cooked chopped potatoes to make potato salad. Freeze remaining pesto or use to spread on toast, in pasta, etc.
