Ingredients

For chicken:
1chicken thigh
1chicken drumstick
2dried shiitake mushroom
rehydrated in hot water and sliced
2 teaspoonssoy sauce
1 tablespoondark soy sauce
3 teaspoonsshaoxing wine
3 teaspoonssesame oil
1 tablespoonginger juice
2garlic
grated
1 teaspoonground white pepper
salt
For rice:
170grice
1 cup basmati cup, rinsed
255gwater
2cloves of garlic
minced
1 inchginger
minced
0.5lap cheong
2 teaspoonsesame oil
2 teaspoonsoya sauce
For drizzle sauce:
Instructions
Step 1
Marinate the chicken and mushroom and set aside. If overnight marinade, add the mushroom just before cooking.
Step 2
Heat the sesame oil in a pan and add the garlic and ginger, frying until fragrant. Add the rice and soy sauce and stir for a minute to let the rice absorb the flavour.
Step 3
Then add in the 1.5 cup water (could used the water from the mushroom), marinated chicken & mushroom, slices of the Chinese sausage and let it come to a simmer point then turn the heat down, cover the pan and let it cook until the rice is done. Checking every 15 minutes and give the rice a stir.
Step 4
Drizzle the sauce over the rice and stir just before serving.
