Chewy udon noodles in a creamy cheesy spicy sauce.. what more could you ask for? You can use any noodle/pasta that you like but I prefer udon noodles!

Instructions

Step 1
In a pot, boil the udon noodles according to the package’s directions.
Step 2
Drain the udon but reserve 2 tbsp of the boiling water.
Step 3
In a pan over medium low heat, melt 1 tbsp of butter.
Step 4
Add the minced shallot and garlic. Sauté them for 60 seconds or until fragrant.
Step 5
Quickly add the gochujang and stir fry the sauce for 30 seconds. You can add more gochujang if you want it to be spicier.
Step 6
Pour in the heavy cream. Mix until well combined.
Step 7
Bring the sauce to a simmer and add in the parmesan cheese.
Step 8
Whisk in the parmesan cheese until it completely melts.
Step 9
Season with salt and pepper to taste.
Step 10
Toss the udon noodles in the sauce until completely coated. Add the reserved boiling water to thin out the sauce if needed.
Step 11
Garnish with extra parmesan cheese and green onions.
Step 12
Enjoy immediately!
