One Pot Chicken & Veggie Rice with Raisins and Currants

If you’re a Rice lover like me, than this one is for you! It’s filled with flavour that bursts in your mouth with each bite! 🤤🤤 I can almost guarantee it’s going to be the BEST rice you’ll try! 🙌🏻😍 This Rice consists of tender Chicken, mixed Veggies and let’s not forget the Raisins & Currants that take it to another level of deliciousness! You can serve it with some salad, however i recommend serving it with some crispy Lebanese Bread, Garlic Yogurt and Nuts. Try it this way and thank me later 😘

Instructions

Step 1
Wash the Rice until the water is clear. Cover with water and soak for minimum 10 minutes.

Cook the Onion, Garlic, Ginger and Tomatoes in Canola Oil over high heat for 8-10 minutes.

Step 3
Add the Chicken Tenderloins (sliced into cubes) and cook for a couple of minutes.

Add the seasonings.

Add the mixed Veggies and cook for 2 minutes.

Add the Tomato Paste and give them a good mix.

Strain the Rice and add it in.

Add the Chicken Stock and Water and bring to a light simmer.

Add the Raisins, Currants and Seasonings and give them a good mix.

Lower the heat, cover and cook for 18 minutes or until the Rice is cooked.
