Ingredients

250gpaneer
500gspinach
1.5onions
7 clovesgarlic
small
ginger
piece
olive oil
1.5vegetable stock cubes
2 tspcumin
1 tspcoriander
1 tspturmeric
1 tspsalt
½ tsppepper
4 tspcurry powder
2 tspgaram masala
2 tspsmoked paprika
½ tspcinnamon
2bay leaves
cream
naan bread
or rice
fresh coriander
to serve
For vegan paneer (tofu)
Instructions
Step 1
Blanch spinach (boil for 2m then cool on cold water) and blend with vegetable stock and 150ml water
Step 2
Sauté onion for 10m on low heat until caremalise. Add garlic and ginger and cook until fragrant. While that's cooking make up the spice mix and then add it in and coat everything really well
Step 3
Add blended spinach and enough water to get a runny soup like consistency. Taste and season as you please
Step 4
Add paneer or tofu and cream and leave to summer for a bit until the rice/Naan is ready
(Optional) Tofu
Step 5
Tear the tofu to get rough uneven consistency and cover in the marinade
Step 6
Fry or fan bake until golden, set aside
