All of the components of these tacos can be made ahead then reheated if need be for a hot meal that ready in minutes. This serves 6 with 2-3 tacos each.

Step 1
Preheat oven to 250°F.
Step 2
Heat a large cast-iron skillet over medium. Add garlic to pan; cook 8 minutes or until skins are well charred, turning occasionally. Remove from pan; cool 5 minutes, and discard skins. Combine garlic, rind, juice, achiote paste, and oil in a mini chopper; process until smooth.

Sprinkle salt over pork shoulder. Brush achiote mixture evenly over pork. Place pork in a medium Dutch oven or ovenproof saucepan; cover and bake for 6 hours. Remove from oven, and let stand for 30 minutes.

Place 2 warm tortillas on each plate. Top each tortilla with 1.5 oz pork, 1 Tbsp salsa, and any other preferred toppings.
