Step 1
Preheat oven to 350°F. (Only if planning to eat at time of preparation).

Fill medium pot with water and bring to boil. Season liberally with spice blend. Place chicken breasts in water and let cook, about 20 minutes. Remove from water and shred. Dispose of water.

In a 9x12 casserole dish, begin constructing enchiladas, beginning with corn tortillas, making sure to cover entire bottom. Layers go:
