Instructions

Step 1
First, cut your bacon or panchetta into cubes. Cook your bacon until crispy and set aside.

Separate your egg yolks from white.

Grate your parmesan cheese.

In a bowl, mix the egg yolks and parmesan cheese until you get a smooth texture. And season it with a pinch of black pepper then add in your bacon or pancetta and mix it in the mixture.
Step 5
Boil your pasta to al dente and save 1/2 cup of pasta water on the side.

Step 6
Transfer your sauce to a pan and toss in your hot pasta. Add a little pasta water to get that creamy texture. Mix until every pasta is covered with the sauce.
Step 7
Transfer to a plate and top it off with more parmegiano reggiano and freshly grated black pepper.
