Instructions

Step 1
Sweat the Onion, Celery, Carrots in the oil and butter in a sauce pan without caramelizing.
Step 2
Deglaze the pan with the tomato juice. Add the water, Crushed tomatoes, salt, pepper, Bay leaves, and Crushed Peppercorn. Bring to a boil then simmer for 30 minutes.
Step 3
Stir in the Worcestershire sauce and Thyme. Continue simmering 15 more minutes.
Step 4
Remove the Bay leaves and puree' the soup with an immersion blender or counter blender until smooth. Strain the scalded Heavy Cream through a china cap and add it to the soup. simmer 5 additional minutes. Adjust seasoning to taste.
