Chocolate Rice-Cake Sandwiches

It takes two minutes to assemble these delicious peanut buttery caramel chocolate sandwiches . Kids love them and grown ups do too. You can play around with the fillings and use vegan yogurt instead of regular yogurt . Enjoy !

Step 1
Spread a table spoon of peanut each butter on three of the rice cakes then spread a tablespoon of caramel each on the other three slices

Step 2
Slice a banana then add a few slices to each rice cake with peanut butter now sandwich then together with the caramel rice cakes

Put yogurt of your choice in a bowl then coat the rice cakes in a thin layer place on a parchment paper lined tray then freeze about 20 minutes or until the yogurt sets . Keep an eye on them don’t leave them in too long or they may get soggy

Melt chocolate of your choice then thin if necessary with a little drizzle of neutral oil or coconut oil. Drizzle chocolate on the rice cakes dunk them and completely coat or even just dunk a half in then freeze ten more minutes . These are best served immediately to ensure the inside is still crunchy . Enjoy !
