Instructions

Step 1
Season the pork steaks with season salt and let sit for a couple hours. Pat dry.
Step 2
Put the steaks in the air fryer at 350 for 15 minutes. They should be slightly underdone
Step 3
While that's cooking, add a stick of butter to a pot or very large pan. Melt.
Step 4
Add onion and celery, cook on low until the onions are caramelized and the celery is tender.
Step 5
Add the green Chile and let that cook for about 3 minutes.
Step 6
Add 1/3 of the gumbo base and start to stir it in and make a roux. Keep adding the gumbo base while the stove or is on low.
Step 7
Start to slowly add the milk, stirring the whole time. Until it's all incorporated. Do not add any salt or pepper!
Step 8
Cut up the pork steaks into bite sized cubes. If some are still raw it's ok.
Step 9
Add the cubes into the Gumbo.
Step 10
Put a lid on and simmer for 30 minutes. Add some water if it seems too thick.

That's it!
