Instructions
Step 1
Bring a pan of water to the boil. Add the potatoes and cookfor 20 minutes or until the are soft when you prick them with a fork. Drain and return to the pan or tip them into a bowl.
Step 2
In a bowl add the olive oil herbs, lemon juice and salt and pepper. Give it a stir to combine. Pour over the potatoes and give it toss, so all the potatoes are covered.
Step 3
Share the rocket leaves between to bowls. Top with the potatoes and finish by tearing over the ham. Enjoy 😊
