Instructions
Step 1
Wash broccoli and chop.
Step 2
Peel stems and chop.
Step 3
Cover stems with stock approximately 2 1/2 cups in large pot.
Step 4
Bring to a boil and then reduce to simmer for 30 minutes.
Step 5
Remove stems. Set aside not used in the soup.
Step 6
Add Broccoli florets to broth and boil 5-7 minutes.
Step 7
Melt butter in a separate pot. Add celery and onions. Sweat until soft.
Step 8
Add AP flour and cook 3-4 minutes to remove flour taste stir frequently.
Step 9
Add mixture into the stock and bring to a boil.
Step 10
Add Milk, nutmeg, salt and paprika. Mix well. Bring to boil.
Step 11
Serve hot..
