Instructions
Step 1
Begin with slicing the potatoes into fries and putting onto boil in salted water for 3-4 minutes.
Step 2
Drain, let them steam dry and throw into hot oil. Season with salt and pepper (smoked paprika as well if you like) and place in the oven at 220c/430f for 25-30 minutes.
Step 3
Clean the mussels and discard any that are already open.
Step 4
Finely chop the garlic and slice the shallots.
Step 5
Get a pan on a medium-high heat and add the butter along with the olive oil.
Step 6
Once the butter has melted add the garlic, stir for a minute and then add the shallots. Cook down for 2-3 minutes until soft.
Step 7
Add the mussels, stir well, pour in the white wine and stir again. Cover and leave for 5 minutes.
Step 8
Remove the lid, at which point the mussels should have opened and will be cooked. Garnish with the parsley.
Step 9
Serve hot and with a side of crusty bread to dip into the sauce.
