1 tspminced garlic
1 lblean ground beef
you can substitute with ground turkey or chicken
0.5yellow onion
small, minced
1red bell pepper
cut into bite-sized squares
1yellow bell pepper
cut into bite-sized squares
1green bell pepper
cut into bite-sized squares
1orange bell pepper
cut into bite-sized squares
2 tspchili powder
1 tspground cumin
1 tspgarlic powder
1 tsppaprika
½ tspsalt
¼ tspblack pepper
Instructions
Step 1
In a small bowl, add fajita seasoning ingredients (or 2 Tbsp premade) Mix with a small whisk and set aside.
Step 2
In a large skillet add garlic, ground beef and onion. Bring pan to medium high heat. Stir and cook, crumbling the beef as you cook. When beef is almost finished, add in fajita seasoning and bell peppers. Stir while cooking so that all the ingredients are evenly coated in seasoning. Cook until peppers are tender, onions are translucent, and beef is fully cooked. Remove from heat.
Step 3
When rice and beef have cooled, you can prepare your meal prep containers.* Divide the rice evenly across four containers. Then add ground beef fajitas mixture over rice, dividing evenly. Store lime and cilantro in a separate container or bag. Store in fridge or freezer. When ready to eat, re-heat food. Garnish with chopped cilantro. Squeeze fresh lime juice over food.
