Vietnamese Pork with Rice Noodles

Instructions

Step 1
Bring 4 qts water to boil in a lg pot. Stir in noodles and cook until tender, 4-12 min. Drain and rinse under cold water until cool. Spread on a lg plate at room temp to dry. Arrange lettuce, cucumber, cilantro, and mint on a platterand chill.
Step 2
Mash Thai chile, 1 Tbsp sugar, and garlic to fine paste. Transfer to a med bowl and add hot water and 2 Tbsp sugar. Stir to dissolve sugar. Stir in fish sauce and lime juice. Set aside.
Step 3
Combine all pork patty ingredients in med bowl. Mix well and shape into 12 patties, 2½ inches wide, ½ inch thick.
Step 4
Grill patties until well charred, then transfer to the bowl of sauce and toss to coat. Let stand 5 min. Reserve sauce for serving.
