Instructions
Step 1
In a high-sided saute pan, combine pasta, salt, and cold water to just cover noodles. Cover pan and heat over med-high. When boiling, uncover pan, and reduce heat to simmer. Stir every minute or so.
Step 2
In a lg, deep bowl, combine 2 Tbsp black pepper, 100 g Romano, Parmesan, and olive oil. Mix ingredients with the back of a wooden spoon until a thick paste forms.
Step 3
When pasta has been simmering 5 min, ladle 1 cup pasta water into a liquid measuring cup, then slowly drizzle ¾ cup into the cheese paste, mixing until smooth.
Step 4
After 10 min, start checking pasta until lust barely al dente. Using tongs, lift pasta into cheese paste. Stir vigorously for 2 min. Use additional water as needed. Serve topped with reserved Romano and pepper.
