Instructions

Step 1
Cook lentils in boiling water or as directed on lentil packaging. (I undercooked them as they would continue to cook while in the oven). Roughly 5-7 minutes.
Step 2
Places garlic and chopped onions in a medium sized plan along with olive oil until onions are slightly caramelized.
Step 3
Mix together the water and tomato paste and add to pan.
Step 4
Add all other ingredients to pan and mix well. (The rice should not be cooked at this point but the water from the vegetables and sauce will allow the rice to cook).
Step 5
Put mixture in glass oven safe plan and cover the casserole with foil. Allow the casserole to cook for 35-40 minutes at 350 degrees.
Step 6
Once the rice is cooked and the top is golden brown, take off the foil and add cheese to the top. Place back in the oven for an additional 10 minutes or until golden.
