Instructions

Step 1
Chop onions and fry in a large pan.
Step 2
If you’re using chicken, cut it up and add when the onions are nearly soft. Cut up the other ingredients.
Step 3
Add to the pan the garlic, ginger and spices. Cook for a moment while you open the tomatoes. Put the kettle on for the stock. Add the tomatoes. Put a teaspoon of bouillon powder in the empty tin and pour on the hot water. Add to the pan.
Step 4
Add the apricots, honey and couscous.
Step 5
Simmer for 10 mins or until the couscous stops being too chewy. Add water and more spice as necessary.
Step 6
Dish up, and scatter on the nuts.
