Filipino Stuffed Crab (Rellenong Alimasag)

Rellenong Alimasag is one of my favorite Filipino dishes. It's simple, but so flavorful and hearty. It takes a bit of work, but is totally worth it in the end. This recipe is just a rough guide since Filipino food really doesn't need measurements. Feel free to play around!

Step 1
Steam/Boil your blue crabs until cooked. Then shock in ice water to prevent overcooking. Extract the meat and save the head shells. Make sure to clean the heads.

Prep your filling ingredients by chopping potatoes, carrots, tomatoes, onions, garlic, chillies (quantity dependent on spice tolerance), and parsley.
Step 3
In a pan over medium-low heat, sweat potatoes, carrots, and onions until translucent (about 3-4 min). Then add tomatoes, garlic, and chillies. Cook for another 4-5 minutes until softened.

Step 4
Turn off the heat, add the crab meat and parsley. Season with salt, pepper, and garlic powder.

Cool the filling to room temp and mix in an egg and breadcrumbs.

Fill the crab heads with the stuffing and shallow fry in a heavy-bottom skillet until golden brown. (about 2-3 min a side).

Alternatively, you can air fry for about 8-10 minutes at 375 F.

Eat on its own or with rice!
