Instructions

Step 1
Clean and spatchcock chicken and place in 1 gallon zip lock bag
Step 2
In blender, add lime juice, orange juice whole peppercorn and garlic and blend until peppercorn is completely broken up
Step 3
In large mixing bowl, combine ancho Chile, paprika, onion powder, coriander, cumin power, oregano turmeric, 1/4 cup olive oil and salt. Add citrus blend and whisk to combine

Step 4
Pour marinade in with chicken and allow to marinade in fridge overnight or 24 hours max.
Step 5
Once marinated, remove from fridge and allow to come to room temperature. Preheat grill with 2 zone clocking. Start cocking chicken on cooler side until it reaches 145 degrees. Transfer to hotter side to brown and char slightly. Remove from heat at 160 degrees. Cover and let rest. Carry over cooking will take it to 165 then cool.
