Step 1
Melt the butter until it becomes nutty (brown butter).
Step 2
Mix the brown butter with the brown sugar and the pistachio paste.
Step 3
Add the egg and egg yolk to the mixture and stir until well combined.

Incorporate the all-purpose flour and baking soda, mixing until a dough forms.

Roughly chop the dark chocolate and add it to the dough.

Cover the dough and refrigerate it for at least 2 hours.

Preheat your oven to 190°C (375°F).

Take the chilled dough out of the refrigerator and shape it into small balls. Place them on a baking sheet lined with parchment paper.

Flatten each cookie slightly with your fingers.
