Instructions
Step 1
In some seed oil, fry the tortillas on both sides for a couple of minutes until crunchy.
Step 2
In a pan with 1tbsp of oil, add the (roughly) chopped bell pepper, onion, garlic and chili. Once they start to char lightly, move to a blender with the drained kidney beans and mix thoroughly. Bring the mixture back to the pan and cook until thickening (5-7 minutes on medium heat)
Step 3
Get chopping the fresh ingredients: shred the cabbage, cube the tomatoes and the optional coriander and red onion for topping
Step 4
Take a tortilla and spread in this order: frijoles (bean mixture), shredded cheese, cabbage, tomato, coriander and red onion
Step 5
Optionally add some sour cream and like juice and enjoy!
