Instructions

Step 1
1. Wash and dry 2 poblano peppers. Roast using your preferred method. I air fry at 400° F for 10 minutes.
Step 2
2. Place in a bag (or leave in air fryer) for 10-15 mins before peeling and removing the seeds.
Step 3
3. Add the poblano peppers, Greek yogurt, laughing cow wedges, cilantro, onion, seasonings of choice (chicken bouillon), & almond milk to the blender. Blend until smooth.

4. Add 3 tbsp of light margarine and 2 minced garlic cloves to a pan.
Step 5
5. Cook for 2 mins and add shrimp with salt and pepper.
Step 6
6. Cook for 2-3 mins on each or until fully cooked. Remove from the pan.
Step 7
7. Bring the pan down to low heat and add the salsa. Simmer for 5-7 mins.
Step 8
8. Add the shrimp back in and combine well. Cook for 2 mins and turn the heat off.
Step 9
9. Immediately add in the cheese and mix in.
Step 10
10. Divide into 4 even servings (~ 1 cup of shrimp) and side of choice (3/4 c white rice).
Step 11
11. Store in fridge for 2 nights or freezer for up to 3 weeks.
