Basic Potato Soup

Instructions

Step 1
Over medium heat, heat oil in a large pot or a dutch oven. Add onion and saute until onion is translucent.
Step 2
Add in the hashbrowns, chicken broth, cream, and whatever seasonings you are using. Bring to a boil then reduce heat, cover and allow to simmer. Stir frequently to avoid sticking on the bottom.
Step 3
While potatoes are cooking, in a separate pan, cook diced bacon until desired crispiness and drain on a paper towel.
Step 4
Once the potatoes are cooked, add in your block of cream cheese and stir until completely combined. Remove from heat and stir in your bacon. Serve with whatever toppings you'd like. I like to use sour cream and cheddar cheese.
