One pan sweet potato fajitas, Delicious and easy to make. Chicken can be subbed for more sweet potato if desired.

Step 1
Oven on bake 400°. Line a baking sheet with tinfoil. Chop up peppers, onion, & sweet potato, add them to the pan. Add chicken (not chopped)
Step 2
Drizzle olive oil across the whole pan, add the fresh lime juice across the pan. Toss together.
Step 3
Add the seasonings to taste. Be generous. If you like spicier then add more chili powder. Toss together.
Step 4
Cook for 30-40min. Remove from oven
Step 5
Sprinkle cilantro across the top of the whole pan, turn oven on broil and cook for another 2-3 min to crisp everything up!
Step 6
Cut the chicken into thinner pieces & Serve hot on warm corn tortillas. Can also add avocado & shredded cheese if desired.
