Instructions
Step 1
Preheat oven to 350 F and prepare a deep dish with water for your hot water bath.
Step 2
Butter and flour a 9 in springform pan. After crushing up cookies, mix with melted butter and press into the bottom of the springform pan. Make as even as possible and let rest in the refrigerator while filling is prepped.

Step 3
Beat together cream cheese and sugar until light and fluffy, and then gradually add marscapone, salt and vanilla. Then add eggs one at a time, mixing until each is fully incorporated.
Step 4
Add a splash of cream, just enough to loosen the filling batter a bit and mix until just incorporated.
Step 5
Remove the springform pan from the refrigerator and pour the filling, tap on the counter a few times to release any bubbles.
Step 6
Bake in the oven for 1 hour 10 min, or until center is almost set. Try to avoid browning!
Step 7
Remove from oven, and run a butter knife, sharp side up, along the edge softly to lessen the pan slightly from the cake. Allow to cool completely before removing the rim.
Step 8
Refrigerate at least 6 hours, preferably overnight, and serve cold with toppings of choice, or as is. Try not to eat the whole thing in a day like my husband.
