Step 1
Cut tomato into 1/4 inch slices. Salt both sides and let sit for 30-45 minutes to draw out moisture. In a separate bowl combine mayo, mozzarella and cheddar cheeses, splash of jalapeño brine, small handful of chopped basil and season to taste with salt and pepper. Once tomatoes have sat for desired time, blot excess moisture with paper towel or clean kitchen cloth.
To assemble
Step 2
To assemble, prepare your pie crust. Crumble half of herbed goat cheese into prepared pie dish. Layer half of the tomatoes and top with onion slices. Spread 1/2 of the mayo cheese mixture. Repeat by layering remaining tomato, onions and goat cheese. Before spreading remaining mayo mixture, sprinkle Italian bread crumbs over tomatoes. Layer remaining mayo and cheese mixture and top with another handful of bread crumbs.

Bake in 400 degree oven for 20-25 minutes or until golden.
