Tomato and Egg Stir Fry

Step 1
Score tomatoes in an x pattern. Then blanch for 30 seconds and shock in an ice bath. Peel off skin (optional).

Beat eggs and scramble in a wok, remove and set aside.

Slice tomatoes into wedges and stir fry with ginger. Season with salt, sugar, and chicken bouillon.

Once the tomatoes are broken down and saucy, add the corn starch slurry (1 tbsp corn starch dissolved in 2 tbsp water)

Step 5
Add the eggs back to the wok and stir. Season more to taste if necessary.
Step 6
Serve over rice or on it's own!
