Lentil tuna burgers

Makes 4 Pattie’s. I topped mine with a fried egg. Even the kids liked them!

Instructions

Step 1
Soak lentils in water for ah hour to overnight. If short on time use boiling wanted and cover with a plate to keep warm and soften faster. Drain lentils and add to a food processor with 1 egg. Chop until combined and grainy (doesn’t have to be fully puréed). Transfer to a bowl and add remaining ingredients, mix to combine. Form into 4 patties. In a skillet over medium heat add a bit of oil and once hot add the Patties. Cook a few minutes until the under side starts to brown, flip and cook until the other side starts to brown. You can eat them as is or load onto a bun with lots of toppings.
