Salmon Ceviche

I wasn't exactly sure what to call this but salmon ceviche seemed like the best option. I put this together using leftovers I needed to finish up and it was a hit! I hate wasting food and always look for ways to use everything I have and I was pleasantly surprised at how easy this was to make and how good it tasted. It's incredibly quick to make and is a perfect snack or fun appetizer that everyone will love. Give it a try and let me know what you think!

1 lbsalmon
skin removed and cubed
1 Tbspsoy sauce
1 tspsesame oil
1 tsprice vinegar
1 tspgarlic powder
1 tsppaprika
For the spicy mayo

Step 1
In a bowl mix together your salmon cubes, soy sauce, sesame oil, rice vinegar, garlic powder and paprika. Let marinate in the fridge for at least 30 minutes (the longer the better).

Step 2
In a cup, mix together your mayo, sriracha, and soy sauce.

Step 3
Take 3-4 pieces of your salmon and add on top of your tortilla chip. Add 1 -2 cubes of avocado. Top with some spicy mayo, green onions and furikake.

Step 4
Repeat with remaining chips and enjoy!
