Instructions
Step 1
Heat oil in a large pan over medium heat.
Step 2
Add onion and stir frequently for 5 mins until browned. Stir in carrots, paprika, mustard and season. Cook stirring a couple of times for two mins until carrots begins to soften.
Step 3
Add potatoes, stock and cream. Increase heat to high and bring to the boil.
Step 4
Reduce heat and simmer for 20mins or until potatoes are tender.
Step 5
Add cheese and stir until melted.
Step 6
Purée in pot with a hand blender.
Step 7
Serve topped with thyme leaves.
