8 ouncescream cheese
room temperature
¾ cupconfectioners' sugar
plus 3 tablespoons - keep this divided
¾ cupcreamy peanut butter
room temperature
1 cupheavy whipping cream
plus 1/2 cup for decorating whipped cream
1 cupwhipped cream
1 teaspoonvanilla extract
8 ouncesmilk chocolate
for melting
1 bagReese's Peanut Butter Cups
pie crust
Cocoa Powder
Optional for decorating only
Instructions
Step 1
Preheat oven to 375°F. Roll pie crust and form shell in pie pan. Poke bottom of crust all over and bake for 25 - 30 minutes - until crust is fully cooked and golden brown.
Step 2
In a double boiler bring bottom pan with water to barely a simmer. Place 8 Oz of milk chocolate in top pan and melt. Once melted pour chocolate into pie crust and allow to cool and set.
Step 3
In a large mixing bowl, blend together cream cheese confectioners sugar and peanut butter until light and fluffy. Color of peanut butter will change and looking for a thick mousse texture.
Step 4
In another large bowl whip heavy cream with 2 tbsp confectioners sugar until stiff peaks form
Step 5
Fold whipped cream just made in previous step into the peanut butter mixture. Pour finished peanut butter mixture into pie shell over chocolate
Step 6
Freeze pie for 4 hours to fully set. Remove from freezer and finish decorating pie
Step 7
In same bowl as previous whipped cream, repeat step with 1 tbsp confectioners sugar and 1/2 cup heavy cream. Whip till stiff peaks form. Fold in desired amount of Redi Whip.
Step 8
Place whipped cream mixture in piping bag and decorate pie as desired.
Step 9
Chop desired amount of Reese's Peanut Butter Cups and sprinkle across top of pie.
