A dish I had on repeat in college. Takes only 15-20 mins, thanks to a Trader Joe's shortcut. I find myself cooking it even now, every so often, when I am in a pinch for a quick tasty dinner.

Simmering Sauce
1 cupsodium free chicken broth
1 Tbspsoy sauce
½ Tbsprice vinegar
or lemon juice
½ Tbsphoisin sauce
or 1 tsp sugar

Step 1
Slice the onions into thick strips
Step 2
Heat some oil on low heat in a small skillet (must be small so the egg doesn't spread too thinly, especially if making only 1 serving). Saute the onions until translucent but still mostly rigid.
Step 3
Combine the simmering sauce ingredients then pour over the onions. Watch for splatter.
Step 4
Carefully place orange chicken pieces on top of the onions, straight from the bag from the freezer. Do not thaw.
Step 5
Once the simmering sauce reaches a boil on medium-high heat, beat the eggs in a bowl and pour evenly. The egg should instantly start to solidify. Cover with a lid and simmer for 5 mins.
Step 6
Take off the lid and keep simmering to reduce any remaining liquid and reach desired doneness. Sprinkle green onions, furikake, seaweed, and/or sesame oil. Serve over a bed of warm rice.
