Chicken Stew with Butternut Squash and Carrots

Instructions

Step 1
1) Marinade the chicken pieces and let them rest for 2-4 hours.

2) Heat a pot and add oil. Once hot, sear the chicken pieces until they turn brown. Remove the chicken pieces and set them aside.

3) Remove any burnt bits from the pot and add a little more oil if necessary. Add butter to the pot.

4) Add the finely chopped onions and sauté on medium heat until they become translucent.

5) Once the onions are translucent, add the minced garlic.
Step 6
6) When the garlic turns golden, reduce the flame to low and add the spices and salt. Mix and stir to prevent the spices from burning.

7) Add a splash of water to the pot to help cook the spices.

8) Once the water has cooked down and the oil separates, add the chopped tomatoes.

9) Stir the tomatoes until they become soft, then add the chopped sweet pointed pepper.

10) Cook for a couple of minutes, then add green chillies (optional), vegetables, and the seared chicken pieces.

11) Sauté for a couple of minutes until everything is well combined.

12) Add hot water to the pot, ensuring there's enough to cover the ingredients.

13) Bring the mixture to a rolling boil, then reduce the heat to low to medium and let it simmer for 30-35 minutes.

14) Once done, strip the chicken (if desired) and add it back to the broth.

15) Stir in fresh parsley, then serve and enjoy your delicious chicken stew!

16) Adjust the seasoning and spices to your taste, and feel free to customise the vegetables and spices as you prefer.
