Step 1
CAKE
Place the eggs with the sugar in a container and using a mixer beat until the volume doubles.
Add the previously chopped almonds in the chopper and mix with the sticks or with the mixer at low speed. Pour the dough onto the prepared tray and bake for around 15 to 20 minutes (depending on your oven) at 180ºC.
Remove and place on a kitchen towel, spread with cream, leaving a little to finish.
Gently roll up the cake .
Brush with reserved cream and decorate with almond pieces (optional)

Step 2
Place the water in a pan with the sugar, let it boil until it reaches 107ºC.
Separate the yolks from the whites and pass them through a sieve. Reserve
Remove some of the syrup to the yolks and stir, then pour everything into the pan and let it cook and thicken until it reaches the desired consistency.
