Chicken and Bacon Carbonara

Instructions

Step 1
Add the spaghetti to the boiling water and cook as per the manufacturer’s instructions.
Step 2
Cut the chicken breasts into small chunks and add to a bowl.
Step 3
Add in the chilli and paprika and mix into the chicken pieces.
Step 4
Heat a large pan or skillet add in the olive oil and the bacon lardons and cook for two minutes. Next, add in the onions and cook for a further two minutes.
Step 5
Add in the garlic and chicken pieces and cook for about 6-7 minutes, check the chicken has cooked all the way through.
Step 6
In a separate bowl add in the eggs, parmigiana, oregano and a pinch of chopped parsley and set aside.
Step 7
Add the cooked spaghetti into the pan with the chicken and mix well add in a ladle of the pasta water and mix.
Step 8
While mixing slowly add in the egg mixture and mix until the egg has almost completely cooked. Plate up, garnish with more parmigiana, and finely chopped parsley.
Step 9
Lick you’re lips and enjoy.
