Step 1
Peel and cut potatoes into smaller pieces then steam cook or boil until
Fork tender . Let them air dry slightly to remove excess moisture

Mash the potatoes and push through a sieve or use a potato river then add egg yolks a pinch of salt pepper and nutmeg and potato starch . Mix to a dough . If the dough is very sticky add a little more potato starch until you can handle it

Step 3
Roll into balls then put into hot water and simmer covered on a very low heat for 12 -15 minutes . ( if you cook on high heat they will fall apart ) take them out then set aside to air dry a little bit
Step 4
Add butter rosemary sage and garlic to a pan and cook until browned then strain the butter into a sieve and reserve the sauce for later then add breadcrumbs to the same pan and toast until golden
