16 ounceslean ground turkey
2 cupsbroccoli florets
1 cupbell peppers
red, green, or yellow, thinly sliced
1 cupsnap peas
trimmed
1 cupcarrots
sliced
1 cupsliced mushrooms
2cloves garlic
minced
1 teaspoonfresh ginger
grated
2 tablespoonslow-sodium soy sauce
or tamari for gluten-free
1 tablespoonrice vinegar
½ teaspooncrushed red pepper flakes

Instructions
Step 1
Cook the Ground Turkey: In a large skillet or wok, heat a small amount of cooking spray or vegetable oil over medium-high heat. Add the lean ground turkey and cook, breaking it apart with a spoon, until it's browned and cooked through. Remove from the skillet and set aside.
Step 2
Stir-Fry Vegetables: In the same skillet, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Add the broccoli florets, bell peppers, snap peas, carrots, and mushrooms. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
Step 3
Sauce and Seasoning: Return the cooked turkey to the skillet with the stir-fried vegetables. Pour in the low-sodium soy sauce, rice vinegar, and crushed red pepper flakes (if using). Season with salt and black pepper to taste. Stir everything together and cook for an additional 2-3 minutes to heat the sauce and blend the flavors.
Step 4
Cool and Portion: Allow the turkey and vegetable stir-fry to cool completely. Divide it into four equal portions.

Freeze: Place each portion in an airtight freezer-safe container or a resealable freezer bag. Make sure to remove any excess air to prevent freezer burn.
To Serve (After Freezing):

When ready to eat, simply thaw one portion in the refrigerator overnight.

Reheat the thawed stir-fry in a microwave or on the stovetop until it's hot all the way through.
