Best Balsamic Salad Dressing

We made it when she was here and every time I use it I’m feeling the love.
‘Big Batch’
3 Tbsp chopped shallot
1 Tbsp (heavy hand) Dijon mustard
2 Tbsp coconut aminos
1/4 cup balsalmic
3/4 cup olive oil
2 Tbsp water (to thin it out if needed)
Blend it up with an immersion blender adjusting to your tastes. After 2-3 days in fridge you may want to add olive oil to thin it out.
