Lemon Loaf

STARBUCKS ICED LEMON LOAF 🍋 Since I’ve gotten so many requests for this, I knew it was time to recreate my own. And I’m so glad I did! This is unbelievable flavorful – it’s sweet, citrusy, moist and will pretty much melt in your mouth! I can’t wait for you to try it! Loaf Ingredients: 2 ½ cups gluten-free rolled oats (can also sub for 2 ½ cups almond flour if you prefer not to use oats) 3 eggs (or flax eggs) 1 tsp baking soda pinch of sea salt 1 tsp vanilla extract 1 organic lemon ½ cup pure maple syrup (or raw honey) ¼ cup milk of choice (use this if your mixture is too thick and is having a hard time blending) Icing Ingredients: 1 cup cashews (soaked to help them blend) ½ cup melted coconut oil 3 tbsp maple syrup juice from 1-2 lemons 1 tsp vanilla extract 2-3 tbsp filtered water (room temperature, not cold) 1. Add your loaf ingredients to a blender and blend until well-combined. Make sure you wash your lemon properly before adding to your blender. 2. Transfer the mixture to a loaf pan lined with parchment paper. 3. Bake in the oven at 350 F for about 23-25 minutes or until a toothpick comes out clean. 4. While the loaf is baking, prepare your icing by adding all the icing ingredients to a blender and blending until smooth and creamy. 5. Let your loaf cool for about 15-20 minutes. 6. Top your loaf with the icing and lemon zest. 7. Slice and enjoy! 💛 . . . .

Instructions

Step 1
1. Add your loaf to a blender and blend until well-combined. Make sure you wash your lemon properly before adding to your blender.

2. Transfer the mixture to a loaf pan lined with parchment paper.

3. Bake in the oven at 350 F for about 23-25 minutes or until a toothpick comes out clean.
