peeled and deveined, extra large
2 Tbspvegetable oil
divided
1 Tbspcreole seasoning
divided
1red bell pepper
cut into strips
1orange bell pepper
cut into strips
1yellow bell pepper
cut into strips
1green bell pepper
cut into strips
1yellow onion
small, sliced
1jalapeño
seeded and thinly sliced
1 tspgarlic
chopped
1 x 8 ozsour cream
container
1 tsplime zest
2 Tbspfresh lime juice
6flour tortillas
warmer
lime wedges

Instructions
Step 1
In a medium bowl, combine shrimp,1 tbsp oil, 1 1/2 tsp creole seasoning.
Step 2
In a large cast iron skillet, heat remaining tablespoon of oil over medium-high heat. Add bell peppers,onion, and jalapeño. Cook, stirring occasionally,until browned and tender, 10-12 minutes. Add garlic; cook for 1 minute. Stir in remaining 1 1/2 tsp creole seasoning. Remove pepper mixture from skillet.
Step 3
In the same skillet, cook shrimp over medium-high heat until pink and firm, 2-3 minutes per side. Return pepper mixture to skillet, and stir until combined.
Step 4
In a small bowl combine sour cream, lemon zest and juice, and salt. Serve with warmed tortillas and lemon wedges, cilantro and quest if desired.
