Glossy Crunchy Candied Almonds

These are one of my favorite snacks at the German Christmas markets and festivals . The smell of these is all over the place and they are so crunchy and amazing . I am using half the recommended sugar but you can add more if you wish

Instructions

Step 1
Add water sugar a pinch of salt and cinnamon to a pan stir to combine then turn on medium high heat and bring to a boil . As stated I used half the sugar but use 200 grams if you like it extra sweet

Step 2
Once the liquid is boiling add the almonds and keep stirring . This will take a few minutes but the sugar will turn to syrup and then go dry and crystallize .

Step 3
Keep stirring the almonds until the sugar starts to turn to liquid again and the almonds are covered in a glossy syrup. Immediately take off the pan and spread out on a paper lined baking tray or silicone mat . Try to separate so they won’t stick together ! Let them cool down and enjoy
