Instructions

Step 1
1. Preheat oven to 425°F. Line a baking sheet with aluminum foil.
Step 2
2. In a medium bowl, combine bell peppers, red onion and garlic. Stir in 2 tablespoons olive oil and half the package of fajita seasoning mix; gently toss to combine. Place vegetables onto prepared baking sheet, and bake 15 minutes.

3. Meanwhile, in a small bowl, combine chicken, remaining fajita seasoning and 1 tablespoon olive oil; set aside.
Step 4
4. When timer goes off, remove vegetables from oven. Push to one side of the baking sheet, and add chicken mixture to the other half. Return to oven, and bake 20 minutes or until chicken is cooked through
Step 5
5. Stir in cilantro and lime juice; serve immediately with tortillas.
