Instructions

Step 1
Start by putting your broth on the stove to simmer. Once simmering add one egg and stir. While doing this step I suggest heating up your griddle for your toasted bread.

Step 2
Cut your cilantro using kitchen shears into a mortar. Add your clove of elephant garlic to the mortar, olive oil, and salt to your mortar and pestle and grind until it forms a smooth paste. You could also use a food processor ,but I prefer taking out my inner rage and smashing it to bits the old fashioned way.

Step 3
Spray your griddle with zero calorie cooking spray and place your bread down to toast until crispy and brown to your desired liking. If your griddle is large enough add your eggs too or just heat them up in a separate pan. I like to use ghee when cooking my sunny side up eggs. That's why I choose to cook them in a non stick pan separate from the toast.

Now for plate up we will take a heaping tablespoon of the cilantro garlic paste and adding them to the bottom of our serving bowl. top with a laddle of your heaping hot broth and stir. Top with your toast, egg, and fresh cracked black pepper. Enjoy!
