For Tikka Masala

Shrimp Marinade:

In a bowl, combine all the marinade ingredients: yogurt, lemon juice, ground cumin, ground coriander, paprika, turmeric, cayenne pepper, salt, and pepper.

Add the peeled and deveined shrimp to the marinade. Toss to coat the shrimp evenly. Cover and refrigerate for at least 30 minutes (longer for more flavor).

Tikka Masala Sauce:

In a large skillet or saucepan, heat the vegetable oil over medium heat.

Add the finely chopped onion and sauté until it becomes translucent.

Stir in the minced garlic and ginger and cook for another minute until fragrant.

Add the diced tomatoes, ground cumin, ground coriander, garam masala, paprika, salt, and pepper. Cook for 5-7 minutes, allowing the tomatoes to break down and the spices to meld.

Use an immersion blender or transfer the sauce to a blender to puree until smooth. If using a regular blender, be sure to cool the mixture slightly before blending.

Return the sauce to the skillet and stir in the heavy cream or coconut cream. Simmer for a few minutes until the sauce thickens.

Cooking the Shrimp:

While the sauce is simmering, preheat your grill or grill pan to medium-high heat.

Thread the marinated shrimp onto skewers and grill for 2-3 minutes per side, or until they are opaque and slightly charred.

Once the shrimp are cooked, remove them from the skewers and add them to the Tikka Masala sauce. Stir to coat the shrimp with the sauce.
