½ tspground cinnamon
½ tspground coriander
0.25fresh cayenne pepper

or breast, trimmed
2 Tbspolive oil
1 cupyellow onion
vertically sliced
2 tspminced ginger
1 ½ cupsunsalted chicken stock
1 ½ cupssweet potato
chopped, peeled
1 x 28 ozno-salt-added whole peeled tomatoes
can, or crushed tomatoes
1 x 15 ozno-salt-added chickpeas
drained and rinsed
¼ cupgolden raisins
rough chopped
1 ½ tspkosher salt
1 tsplemon zest
1 ½ Tbsplemon juice
¼ cupfresh cilantro

Instructions
Step 1
Stir together cumin, cinnamon, coriander, and cayenne pepper in a small bowl. Sprinkle chicken even with spice mixture. Heat 1 Tbsp oil in a large nonstick skillet over medium-high. Add half of the chicken to skillet; cook until browned on one side, about 5 minutes. Turn chicken over and cook 1 minute. Transfer chicken to a 5- to 6- quart slow cooker. Repeat procedure with remaining chicken and oil.

Step 2
Add onions and ginger to skillet; cook, stirring often, until slightly softened, about 3 minutes. Add stock to skillet; cook 1 minute, stirring and scraping to loosen the browned bits from bottom of skillet. Transfer onion mixture to slow cooker. Stir sweet potato into slow cooker.

Using kitchen scissors, chop tomatoes in the can. Stir chopped tomatoes and tomato liquid, chickpeas, raisins, and salt into slow cooker. Cover and cook on low until chicken is done and vegetables are tender, about 5 hours. Remove chicken to cutting board; cut or tear into bite-size pieces. Stir lemon zest and juice into mixture in slow cooker; gently stir in chicken. Ladle stew into bowl and top with cilantro, if desired.
