Step 1
First, we’re going to make our béchamel sauce. Pop a pan on medium heat, once it’s warm add 10g of butter into the pan. Take care to ensure the pan isn’t too hot, otherwise your butter will burn!

Once the butter has melted, add your flour in to make a roux. Whisk it up over a gentle heat, and continue cooking and stirring for around 3-5 minutes to cook out the flour. We do this so our béchamel doesn’t taste like flour!

Next, slowly whisk in your milk to ensure the sauce retains its thickness

Now, add your nutmeg, bay leaf, and garlic powder. Mix it up and add more milk to reach your desired consistency. Take it off the heat, and allow it to infuse while you get started on the rest of your sandwich

Pop a frying pan on medium heat and spread butter on both sides of one slice of bread. Once sufficiently heated, add your buttered slice to the pan and cook until golden. Then, flip it over to cook the other side. Repeat with the remaining slice of bread

While your toast is cooking, grate your cheese. Grab your toast out of the pan, and spread mayo to taste, then top with a decent dollop of béchamel, 1/2 of your cheese and your smoked ham. Then, heat your oven to 200C/gas mark 7

Spread mayo (to taste) on the remaining slice of toast. If you really like mustard, feel free to add some more at this point, before popping your toast mustard-mayo side down on top of your sandwich.

Lastly, add the remainder of your béchamel sauce and cheese to the top of your sandwich. Now, pop it in the oven for 10-15 minutes or until your cheese is golden and melted. Well done! You absolutely bossed this recipe, enjoy your Croque Monsieur 😉
